Brown kheer

Ingredients

Soak 1/2 cup (95 grams) of brown basmati rice for 15 minutes, then remove.
2.5 to 3 cups (625 ml) of almond milk
3 to 4 tablespoons raw cashews
2 cardamom bean seeds
A nice pinch of salt
1/4 cup (50 grams) raw sugar
2 to 3 tablespoons chopped raw nuts like cashew nuts
2 to 3 tablespoons currant or raisins

Instructions

Combine brown rice with 1.5 cups of water and cook over medium heat for 30 minutes. If you are using white basmati rice, cook for 11 minutes or so.

Blend almond milk with cashews until smooth. Add a drop of water to the boiling rice to bring down the temperature. Then add milk mixed with rice. Add sugar, salt, cardamom seeds and cook for 15 to 20 minutes.

In another pan, fry the nuts in 1/2 teaspoon oil or on a dry pan until golden. Add curry powder and cook for one minute. Add nuts and currants to the boiling milk.

Taste and adjust if needed. Keep boiling until brown rice becomes soft and thick as per preference. 10 to 20 minutes

Serve hot or cold. Garnish with almond flavor or pistachio flavor.




Why does kheer develop a brown color while cooking?

The brownish color of the kheer shows the milk is overcooked and burnt. My grandmother always said you shouldnt heat / cook the milk so much that it turns red. At that point the milk is overcooked.
