- Cook your pasta in a large pot of salted boiling water. Drain it, toss it with some olive oil, and set it aside to cool.
- Chop your cherry tomatoes and cucumbers, mince the parsley, and crumble the feta.

- Whisk together the dressing ingredients.
- And toss everything together in a big bowl! Season to taste and dig in.

- I've made a lot of pasta salads before (see here and here), but I noticed that I don't have a really good classic pasta salad with vinaigrette dressing on site. This recipe is simple and fresh - along with the pasta I add juicy cherry tomatoes, tangy feta cheese, a handful of arugula, lentils for protein, pine and small cucumbers for crunch, and lots of fresh parsley and basil
- Ingredients
- 3 cups uncooked fusilli pasta
- 2 heaping cups halved cherry tomatoes
- 1 cup cooked chickpeas, drained and rinsed
- 2 cups arugula
- 1 cup Persian cucumbers,in sliced into thin half moons
- 1 cup crumbled feta cheese
- 1 cup basil leaves, torn
- ½ cup minced parsley
- ½ cup chopped mint
- ¼ cup toasted pine nuts.
- Instruction.
- Bring a large pot of salt water to a boil. Prepare the pasta according to the package instructions, or until the El Dente has passed a bit.
- Meanwhile, make the dressing. In a small bowl, mix together the olive oil, lemon juice, mustard, garlic, herbs de provence, red pepper flakes and salt. (Note: The flavor of the dressing will be stronger, it will soften when it coats all the ingredients of pasta salad).
- Take out the pasta, toss it with a little olive oil (so it doesn't stick together) and let it cool to room temperature. Transfer to a large bowl with tomatoes, lentils, arugula, cucumber, feta cheese, basil, parsley, mint and pine nuts. Add the dressing and toss in the coat. Season to taste with more lemons, salt, pepper, and / or olive oil drizzle, if desired, and serve
